Why Should You Buy Our Wines!

With all those vast choices of wines on the shelves of your local supermarket, package store and local restaurants wine lists, why should you consider buying our wines? Many of their wines sport exotic places and far-away lands. Many of their labels tout whimsical beasts and staid places. Many of their bottles are decorated with the latest and most colorful plastic and foil gingerbread and closures. Many of their labels talk about their wines clarity and blended flavors. Their wines are mostly filtered and produced in the thousands of cases and are available almost everywhere.

Our wines, however, are ‘always’ in limited supply. Our grapes are locally grown on our own vines and have their roots buried deeply in the sandy soils of eastern Manatee County, Florida. The grapes that make our wines are from an ancient stock that is native to the southeast United States. They sport names like “Noble, Magnolia, Black Beauty, Supreme and etc.”. Collectively, they are, all, Muscadine grapes. These grapes grow more in clusters than in bunches and have skins thicker than almost any other grapes in the world. To the uninformed, the wines made from these grapes are considered inferior to the more popular bunch grapes. The truth is, they make a
‘World Class’ wine! Our single goal is to produce the ‘Gold Standard’ of Florida wines and to produce ‘Only’ World Class wines.

We are “NOT”
driven by the mantra of wine clarity, but, rather by the taste, bouquet and flavor of the grape. Our grapes/wines are “NEVER” blended! From the vine to the bottle, we never mix or blend a single grape or carboy of wine! “All” our wines are fermented with the ‘skins’ of the grape. Yes, even the ‘whites’! This insures that our wines are imparted with all the goodness and flavor that nature has stored in the skins. Not a single bottle of our wine is bottled until it is, at least, one year old! Wine needs to rest in order to mature and to stabilize the bouquet and flavor. “All” our wines are “UNFILTERED”! By using the natural force of gravity, we are able to achieve a remarkable level of clarity to our wines. This labor intensive process will take a year to reach maximum clarity. It will entail manual racking’s of from three to six times for ‘each & every’ carboy of wine. Because our goal is to protect the integrity of the taste, bouquet and flavor of the grape, we consider this traditional method vital to creating our wines.

in total darkness and at the ideal storage temperature of 52 to 57 degrees.  We are a  “GREEN”, environmentally responsible, vineyard and winery! This means that we are deeply concerned about our carbon footprint and our impact on the environment. This deep concern and commitment is reflected in everything that we do. Whenever it’s possible, we eliminate the use of electricity from the grid and opt, instead, for alternative forms of energy. As examples….The use of ‘Solar Energy’ drives our irrigation system. Our ‘Human Energy’ drives our grape crusher and grape press. “Every" wine bottle that we use is ‘locally sourced and recycled. By recycling 100% of our wine bottles, we are able to reduce our ‘carbon footprint’ by a whopping  60% ! To seal our wine bottles, they are ‘hot-dipped’ in sealing wax. This, too, is re-melted and reused when our customers return their empty wine bottles to us to recycle. We use  100% Natural Corks  for corking our wine bottles. Unlike artificial plastic corks, our natural corks are renewable.    A new wine age is dawning in Florida! With your help and support, Florida and Manatee County will be known as much for its fine wines as for its beautiful beaches! Why We Use ‘100% Recycled’ Wine Bottles!

Did you know that more than 300 million cases of wine are sold in the U.S.A. each year?

Did you know that an estimated “70 percent” of these wine bottles end up in our local landfills (per the EPA)?

Did you know that for every ton of this glass that we have to replace that “384 pounds of mining waste” is created?

Did you know that for every ton of this glass that we have to replace that the following resources must be used…”1,330 pounds of sand, 433 pounds of soda ash, 433 pounds of limestone & 151 pounds of feldspar”?

Just think about the vast amounts of non-renewable fossil fuels that are being wasted!

Sound crazy?? Yes, it is!! Glass wine bottles never wear out and they can be recycled & reused…”Forever”!

Because we are deeply concerned about our environment, we have chosen a more earth-friendly and sustainable path. 100% of our wine bottles are ‘locally sourced’ and ‘recycled’! By doing this one thing, we have reduced our carbon footprint by a whopping…60%! So, why do we do it? Because it’s the right thing to do!


Why We Use “Real” Cork Corks!



‘Real’ cork is not only the traditional way to cork wine, but the “Greenist” way to do it! Real cork is sourced from the bark of the Cork Oak tree (Quercus Suber L). Removing the cork bark does not kill the tree. The cork tree regenerates new cork bark for harvesting in the future. Depending on where the cork is sourced, (example: Portugal or Italy) it is harvested on a cycle of 9 to 12 years. The average Cork Oak will produce enough natural cork to bottle over 4,000 bottles of wine. There is one Cork Tree (in Portugal) called “The Whistler Tree” that has had its cork bark harvested for over 212 years. Its last cork harvest, in 2000, produced enough natural cork to cork “100,000” bottles of wine. That brings it lifetime total to over 1,000,000 corks!

The forest harvesting of natural cork follows an age old collection method that enables the trees to flourish ‘without’ the intervention of herbicides, fertilizers and irrigation. The cork manufacturing process utilizes every bit of scrap bark for use as cork particles or fuel. Economically, cork harvesting supports a large agrarian population that has few other viable prospects. Being deeply concerned about our environment, we “Only” use Real cork corks in all our wine bottles and will continue to do so into the future. It’s the right thing to do!


Why Our Wines are  “Unfiltered”?

For, at least, the last 25 years, most wineries have been using ‘filtration techniques’ to make their wines appear crystal clear. Their wine is processed through a series of filtration equipment called Micropore Filters, Membrane Filtration and Sheet Filtration (think coffee filters). This involves the use of thick layers of fine materials like ‘diatomaceous earth, cellulose powder, perlite, etc.’ The effect of this wine filtration enables these wineries to quickly process large volumes of wine and expedite their shipment to the marketplace (from the ‘vine to the shelf’ in 3 months).

We, however, believe that to create a great wine it must ‘never’ be rushed and ‘never’ be filtered. That’s why “ALL” of our labels proudly state “Unfiltered”*. For us, it takes an entire year of loving care and constant tending before we would ever consider bottling our wine. Throughout this year, we will manually & personally, ‘Rack’ each carboy of wine from 3 to 6 times. By racking (using ‘natural’ gravity) and not filtering our wine, we insure that the full flavor of the grape and fruit will never be filtered out and that the taste and bouquet will always be the best that it can be!

(*Note: You cannot say ‘unfiltered’ unless the wine is not filtered. Filtered wines do not have to say that they are filtered.)



    What You Should Know About Our   “Unfiltered*” Sparkling Wine

    As with ‘All’ our wines, our “Sparkling Wines” are made from the finest ripe grapes from our grape harvest, have ‘never’ been filtered and have rested for, at least a year, before they were bottled. In the tradition of the grand, old world winemakers, we ferment our Sparkling Wines…”twice”! Once in the fermenting room and, for the second time, in the…’bottle’(see label)! By fermenting for the second time in the bottle, we are able to capture the tiny, natural, effervescent bubbles of the yeasts fermentation. These tiny bubbles are forever sealed into the wine. Here they will rest and wait until you release them. Then, with a thunderous burst, they will fill your glass with the nectar of the grape and their countless tiny bubbles.

    Since our wine is sealed in the bottles at the start of the second fermentation, you should expect the resulting Sparkling Wine to be “Absolutely Dry”. Additionally, you should expect a fine layer of dead yeast cells coating the bottom of your wine bottle. These dead yeast cells are normal, harmless and tasteless and should present no problem with your enjoyment of your Sparkling Wine!

    (*Note: You cannot say ‘unfiltered’ unless the wine is not filtered. Filtered wines do not have to say that they are filtered.)


     “Natural Fruit Pectin” is a Key Component
    in our Unfiltered Wines

    When most of us think about ‘Natural Fruit Pectin’, we think about that ‘stuff’ that is added to jellies and jams to bind everything together and gives those jellies and jams their consistency. Have you ever thought about where that ’Natural Fruit Pectin’ comes from? If you guessed “Grapes and Fruits”, you guessed right!

    Because none of our wines (both grape and fruit wines) are filtered, we are able to retain this ‘Natural Fruit Pectin’ in all of our wine products.

    While most modern wineries filter out this ‘Natural Fruit Pectin’, we celebrate its inclusion!

    So, what is ‘Natural Fruit Pectin’ and why is it so important?

    Firstly, let’s get the technical description out of the way. ‘Natural Fruit Pectin’ is a naturally occurring, complex carbohydrate found in the cell walls and the inter-cellular space of plant cells. The highest concentrations are in the skins of grapes and the peels of fruits. In its natural form, pectin is an indigestible dietary fiber.

    So, why is it so important that we retain this ‘Natural Fruit Pectin’ in our wines? Why don’t we just filter it out like most factory wineries do today?

    Quite simply, it promotes good digestive health. Additionally, there are many scientific studies that have shown that ‘Natural Fruit Pectin’ has many other health benefits. Some studies suggest that it lowers our ‘bad’ cholesterol levels. In any case, we suggest that you do your own research and see for yourself. Instead of filtering it out, we celebrate the benefits of ‘Natural Fruit Pectin’ and its inclusion in our wines!

    Although not always noticeable, ‘Natural Fruit Pectin’ in our ‘unfiltered wines’ may sometimes show up as a ‘mild cloudiness’ of the wine. Most often, you will notice this affect in our ‘white’ wines. Remember, all of our wines, including our white wines, are “Always” fermented with the skins!

    In conclusion, our single goal is to handcraft the finest wines possible! We consider ‘Natural Fruit Pectin’ as a key component of this goal!

    Muscadine Grape: Talking Points

    "We have discovered ... grapes of such greatness, yet wild, as France, Spain, nor Italy hath no greater ..." So spoke Governor Ralph Lane in a 1585 letter to Sir Walter Raleigh. He was describing the muscadine, a slip-skin variety of grape that grows in abundance in the southern half of the United States. In fact, one of the "mother vines" discovered by Walter Raleigh's settlers is still alive on Roanoke Island: it has a trunk two-feet thick and covers half an acre of ground.

    Muscadine Grapes – A Red Grape And So Much More:

    Red Grapes are terrific – a nice source of resveratrol and countless other polyphenols. In short, Red Grapes are a terrific fruit with strong health properties. However, what if you could eat a grape that had everything that Red grapes have – plus so much more? The Muscadine Grape is that grape. To date, in vitro studies have shown positive effects of muscadine phenolics against blood, colon and prostate cancer.
